This collaboration celebrates the fourth anniversary of Paradise Dynasty in South Coast Plaza as well as the tenth anniversary of the sisters’ first Chiang Rai location.
The innovative tom yum xiao long bao (XLB) will be served at Paradise Dynasty and is a highlight of a program that encourages diners to explore authentic Northern Thai cuisine. The dumpling showcases the rich flavors characteristic of the sisters’ Chiang Rai restaurant, which specializes in Northern Thai dishes. It represents the sisters’ commitment to bringing traditional Thai flavors to diners, eliminating the need for them to travel to Thailand for a taste of their heritage.
When approached by Paradise Dynasty, the sisters noted the impressive scope of the collaboration, which began with an ambitious order for 40 gallons of tom yum soup. However, they opted to start with a more manageable amount of 25 gallons of soup. Maintaining authenticity in the flavor was crucial for the sisters, as they wanted to represent all of Thailand, not just their region of Chiang Rai. A taste test at Paradise Dynasty was conducted to ensure the flavor met their expectations, with Aem expressing a heartfelt reaction when witnessing their family’s soup released from the dumpling.

The idea for founding Chiang Rai emerged from the sisters’ desire to celebrate their heritage and share their family traditions with a broader audience. The sisters opened their first Chiang Rai restaurant in Long Beach about a decade ago, with Aem initially working part-time at a Thai restaurant before taking over the establishment on a payment plan to start their entrepreneurial journey. Their culinary efforts have been recognized in the Michelin Guide for 2022, 2023, and 2024, highlighting the quality and authenticity of their Northern Thai offerings.
Earlier this year, the sisters expanded their reach by opening a second location of Chiang Rai in Tustin, designed to evoke the atmosphere of a Thai street market. At the original Chiang Rai, the most popular dish has been Khao soi, a traditional egg noodle soup that comes in various styles.
